Looking for a grain-free, gluten-free, or just a healthy alternative to pasta? Try spaghetti squash! It's simple to make and very tasty! If you have never cooked with spaghetti squash before, don't be afraid. Just cut the stem off of the squash and cut the squash in half, lengthwise.
Next, scoop out the seeds and discard them or use them in your compost. Brush the cut sides of the squash with butter and sprinkle with salt, pepper, and garlic powder.
Place on a large baking sheet, and bake until tender, about 45 minutes at 450 degrees F. Let the spaghetti squash cool for a few minutes. Take a fork and scrape the squash to remove the flesh in long strands...like spaghetti!
Now that you have broken up all of the strands, you're done! You can enjoy this by itself as a side dish, or top it how you would normally top spaghetti noodles. If you're serving a large group, bake a few squashes and shred them into a casserole dish, then top it with some homemade meatballs and spaghetti sauce.
Now for some shredded parmigiano (must say with an Italian accent) cheese. Delicious!!
